Green Chile stew. I normally use ground pork, but used half a pork butt roast smoked on the egg for 30 minutes, then into the pressure cooker for 45 minutes. It will be better tomorrow when I can chill it and peel off the (estimated) 3/4" of fat off the top.

Nice. You’ll want the thickest part of the brisket at the back, rotating throughout the cook if necessary to achieve even bark. -
