Ribs have kinda been my buggaboo - looking back, I don’t think I’ve ever posted a rib cook. Tonight - maybe best ribs I’ve ever made. 2 racks of St Louis cut. Cleaned them up real good. Rubbed, then in SV for just 4 hours at 165. Finished w just 30 minutes on the egg. Perfect texture. Chicken was darn good. too!JohnEggGio said:

It looks like Louisiana is going to get B slapped backhand and forehand. Still supposed to be category ones but with two of them the rains and wind will stretch out nearly 4 days. We will probably catch some of it over here in Mississippi but not dangerous amounts.

Made sous vide skirt, cooked up some ground beef, and some pulled pork for fajitas and tacos yesterday but only ended up with pics of the ribs. These tore on the bend test so slightly overdone bit still pretty good.
