Good Morning...........the most important thing to a good sausage is  Quality Protein , Salt 20-30% Fat .......Just those  things together you will get a great sausage .  To take it further decide what flavor you like IE Italian .........then you have Sweet or Hot  My Basic Italian 15--2% Salt .2% Black Pepper .2 % Sugar .3% Cracked Fennel .1 % Coriander ( or omit) .1% Caraway ( Or Omit ) you also want 10% liquid , can be water beer wine.......hope this helps a little
