    @Cen_Tex-I know you run in high-end circles but I would definitely agree with you.  Although I have never had the Cen-tex Salado special I am sure the crowd will most definitely enjoy the "regular" SRF fare with the Cen-tex eggspertise.  Marketing is quite a trick-dang, the Gold just came on the scene a few months ago.  Enjoy @NOLA's gig and the city.  Better to be lucky than good any day!

    Despite Centex not wanting me to attend I'll be there...just to annoy him. His brisket better be spot on. I'll be sleeping in my truck.

    With all I have read so far about brisket camp, I'm thinking 3 days may not be enough time.

    One last test run before the big show... CAB, salt and pepper (75 pepper/25 salt). 275 over new oak until the bark sets then I'm wrapping it. Normally wouldn't but I'm trying to simulate the brisket camp cook. On by 10am , off by 6-7pm. This was a 10 lber with 2.5lbs of hard fat trimmed off. imageimageimageimage

    I have been practicing almost non stop. I'm to the point now I'm thinking about serving hamburgers instead. I have ate more test brisket in the past week than I have ate in the last 5 years.

    Location- Just "this side" of Biloxi, Ms.

    Status- Standing by.

    I've only done 2 (including today). I had one sandwich and a few bites of different parts. I can't eat nearly as much brisket as I used to- But I still like to cook them. I'm taking this one to the fire station so they can have it for Sunday Night Football. I'll steal a few bites to see how it is.

    I'm cooking 1 more tonight. Going to give it a 2 hour smoke at 180 to try and improve the smoke ring then I'm going to blast it at 400 until finished. No matter the results this is the last test.

  • This one is looking good. 4.5 hrs in and Stalled out at 174. Might just let it ride with no wrap if it pushes through quickly. image
