  • I'm off work between Wed Sept 17 and the following Monday.  Gonna get stuff set up and an extra day to make bail after the event.

Sounds like @henapple will make it!  Hide your bacon!

Good chance Travis will make it too.  Travis, Tony and I shared an egg when we cooked at Salado couple years back.

I might need to get another team of lawyers on standby....
sweet. This is gittin' weird. just the way I like it. We are going to need more eggs, no?

The Cen-Tex Smoker -  I dunno.  How many do you think we'll need for brisket?  I'm confident we'll have at least 4 large and a medium.  Probably can get another 4 based on people offering.  Will have some other grills too.

Well, I don't want to hog. I'm sending to SRF Wagyu down. I'm cooking one and Lakewade may want to cook the other. If not, we'll figure that out. I guess with SGH's big rig, we can throw any extra stuff in there. maybe 2-3 for briskets and 1-2 for the all day munchie coooks. Sounds like we are there. Who else is cooking besides me and SGH? Do we have a head count? You saw how fast a brisket gets killed at Salado. Like 5 minutes and it's gone.

I was planing on getting at least 6 large, total, plus we'll have some others, including for other food, and I'll try to get my buddy's Meadowcrest out there.  @SGH - you're bringing a large and ??  your offset or the pig trailer?

I just talked to Victor from the band and got everything set up.  I'm going to go out and see them play on Wed and give him a deposit.  They're gonna play from 6PM to 10PM Sat night.

This is the band's website.   I'll have to draw up a flyer.

I been test running turbo on the vertical so I was bringing it. Thought I might bring a small towable offset as well. Just a note. The vertical will hold in excess of 750 pounds of meat. I think we will be fine. I could bring the Quad Hog Cooker if deemed necessary. It will hold in the 3,000 pound arena but it's a fuel hog.

Location- Just "this side" of Biloxi, Ms.

    Status- Standing by.

@SGH - I don't think we need the quad hog cooker.  Offset is perfect. Can you bring a Large BGE?

I think I have about 8 or 10 bags of Royal Oak and a couple bags of Stubbs.  Have an assortment of smoke wood.  If @henapple comes down, maybe he could grab some OO.

Also, I plan on demonstrating (well, my friend Randy if he agrees to it) cooking up a 7 gallon batch of smoked turkey gumbo.

@TigerTony - They're playing at The Kamp next to Hillbilly BBQ in Kenner.  It's a big outdoor biker bar.

Thanks for the offer - I will take you up on it.  Would like to get everything set up so I can go out with some of the out-of-towner miscreants Friday night.

@SGH - I will have a very powerful sound system out there all day, so we can get all the requests out of our system before the band starts.

If the briskets are a dud then the more appropriate song may be: Another One Bites the Dust ;)

Not sure if we have fans of the band from Baltimore called CLUTCH, but they are an amazing band to see live...

They do a lot of East Coast and Midwest shows...

nolaegghead I so want to be there but it just isn't going to happen. Please give me some hope and tell me you'll make this an annual event or at least do it again. I think it'd be a blast to meet, cook, learn, and party with all you guys in person. I hope the live streaming deal comes through. You guys have fun I'll look for posts an I'll be there in spirit. @td66snrf - I'm not going to commit to an annual event until I see how the first one goes ;)

But I'm hoping for the best.  New Orleans is an idea destination - in the midst of all the southern BBQ states and a destination in itself.

If I'm not regretting it afterwards, might just make next year the second annual ....

@Hibby - nice!  One of these days I'll get BMW with the flat twin.
