Cooking mullet roe.

Location- Just "this side" of Biloxi, Ms.
Status- Standing by.

Grilling some chicken and crushing some light beers in between rain showers. Margs later.

@ColbyLang - having to start up a second shift on short notice is never easy and to do it in this labor market has got to be quite a challenge as you note. Now layer on Friday night. Hopefully the demand continues to require the second shift and over time you can properly staff the plant.
That bourbon on the far end will taste mighty fine.
Hang in there.

Thanks @lousubcap. We were fully staffed before todays call ins. Never easy with this labor force. 2 weeks plus in, I thought we had most of the kinks ironed out……..lousubcap said:@ColbyLang - having to start up a second shift on short notice is never easy and to do it in this labor market has got to be quite a challenge as you note. @Ozzie_Isaac - Must be quite a celebration/event to draw those spectacular horses. Enjoy-
Edit: Does sparky the fire dog get to ride?

It is funny you say that. These ones are not racing, but there is a Clydesdale ranch south of here. The girls show the Clydesdale at Western events. They have also run them on barrel patterns before. I have some videos somewhere. You can feel them through your feet when they are lopping.Legume said:Are they racing?

We lived in San Diego for a few years when the kids were young and we would take them to Sea World and always visit the AB pavilion where we would get free beers and the kids could check out the Clydesdales. It’s not like looking at regular horses, very cool.THANK YOU FOR YOUR ATTENTION TO THIS MATTER -

Playing with fire again. Attempted some pesto pizza, definitely need some massive work, but edible. Getting a good bed of coals and going to do a steak next....
Edit: steak came out amazing...Even overdone it has so much depth. Flavor is outstanding. Super basic strip with salt, pepper, garlic, onion salt.

Google or search YouTube for bottarga— it is great. It’s a treasure that will never be on the menu at Applebees for example. Not slamming you I am just saying it’s a treat for the folks that know. Not sure I can get behind this one 🤣 -
@Ozzie_Isaac - The true enjoyment is playing with fire. The outcome is just dessert. Pizza looks way better than edible-I would crush it. Crust scale merits a toast scale of 5-6 and that's a win in my book.
Next round is...?

Next up is Queso. My wife's favorite. You are right, the main attraction is playing with fire, drinkin beer, playing with the dogs, and listening to music. Food is a happy by-product.lousubcap said:@Ozzie_Isaac - The true enjoyment is playing with fire. The outcome is just dessert. Pizza looks way better than edible-I would crush it. Btw, I am not pulling items to edge for photos. I am cooking on the edge.
