Pizzas. I was too busy cooking to
take a bunch of pics. Had a chance to catch this one before it was devoured. 3 pies and my best crust effort to date. This one was red sauce, bufalo mozz, prosciutto, basil, a sprinkle of good olive oil and a pinch of sea salt. -

Thanks cap, been several years since I’ve done a rib roast and completely underestimated cook time and missed my goal start time while helping my wife plant new landscaping perennials. Fed the kids chicken nuggets and sent them to bed before we ate. So this just happened.
1.5kgs of Welsh dairy breed bone-in sirloin. I'll let you decide how it tasted based on the pics.
A decent pinch of SPG on the fat, nothing else
35 minutes in, working the render
A light sear to finish
30 minute of resting
And there's the money shot.
All I did was light the coals and wait - oh and drink a few beers, obviously.
Credit where it's due; the beef is from Meat Matters who specialise in low volume high quality selected cuts from ex-dairy cows.
