Those were heavily seasoned thinner T-bones. Not real thin but not as thick as I prefer. They were good.

Lamb moussaka. SWMBO made it, maybe the best thing I've ever eaten in my life. She's been refining the recipe for decades. I saw her updating it on the computer the next day, I'll see if I can't steal it.

@nolaegghead - thank you and please thank your spouse for this. Moussaka is one of the two favorite foods I was introduced to in my trips to Athens and the Greek island Corfu while serving in the Navy. This recipe also adds a nod to my other discovery, Souvlaki.Ubi panis, ibi patria.

2 large eggplants
1-2 large onions, chopped
6 toes garlio, minced
2 lbs ground lamb
4 Tbsp all-purpose flour
2 (14 oz.) cans petite diced tomatoes
½ cup chopped fresh herbs (definitely include parsley, but whatever else you want!)
3 fresh large tomatoes (or 5 Roma), thinly sliced
salt and ground blaok pepper, Aleppo pepper, crushed Red pepper to taste
Topping:
2½ cups plain Greek yogurt
4 eggs
5 oz crumbled Feta cheese
2/3 cup grated Parmesan cheese
1. Peel eggplant if desired, or peel stripes down them. Cut into ¼" thick slices. Spray baking sheets with cooking spray and spread slices on sheets. Spray top of slices also. Bake at 400F, turning once, until soft and turning brown. Alternatively, you can salt and 'sweat" the eggplant slices in a colander, then pan fry lightly in oil.
2. Heat 3-4 Tbsp oil in a large heavy pan. Sauté the onion and garlic until soft, but not browned. Add lamb and cook over high heat until browned.
3. Stir in the flour until mixed and starting to thicken. Add the canned tomatoes, herbs and other seasonings to taste. Bring to a boil, then reduce heat and simmer gently for 15-20 minutes.
4. Preheat oven to 350F. Layer half the eggplant slices in the bottom of a large, deep Lasagna pan (you may want to halve or quarter the slices to make serving/eating easier). Next, add a layer of tomato slices.
5. Top the slices with half of the meat/tomato mixture, then repeat the layers of eggplant and tomato. Cover with the remaining meat/tomato mixture.
6. Beat together the yogurt and eggs (by hand is best just until well mixed), then mix in the Feta and Parmesan cheeses. Pour the mixture over the top of the dish and spread it evenly.
7. Bake for 35-40 minutes, or until golden and bubbling. (You may want to broil for a couple of minutes at the end to brown the surface). Remove from oven and allow to rest for 10-15 minutes before serving.
