I had some leftover lamb recently.  We ate it over salad.  But I suspect you could use it for any other leftover thing - like nachos or whatever.

With that said, I suspect someone will have a much more creative and lamb-appropriate suggestion.
I know this sounds simplistic, but I really do like leftover lamb in a sammich.

If you are into Indian food and want to up your IP game, check out this book. Simple recipes and easily the most successful Indian food I’ve ever made.

I believe there are also some recipes on her website: https://twosleevers.com/
Urvashi Pitre’s website is a great resource for all kinds of stuff. I’ve made a few Ethiopian dishes using her recipes, and they were outstanding.

Although not IP recipes, I love this book as the recipes are relatively easy to cook, and  not just North or South Indian. Also a great resource, if you’re into Indian food.

4lbs of bone-in pork belly ready for Sunday lunch.  Throw me your cook suggestions*

    * please constrain suggestions to how it should be cooked, not about the chef's mode of attire during the cook, optimal incantations & chants to accompany the cook, best improvised dance moves and 'free jazz' to harmonise with the cook, or, about any once in a lifetime investment opportunities.
    Thank you.

I thought you Brits were supposed to be fun...

I've never cooked a pork belly so I've got nothing for you within the very limited scope that you are allowing.  It's a real shame because the only thing I'm pretty sure about is that if I were going to cook this I'd plan to wear the jersey of my favorite soccer team so as to optimize the chances of a good outcome.  Pants are optional.  You're welcome.

The shallow pan is called a gwok. I buy the beef and chicken premixed at the Mexican grocery for $4.95 a pound, add shrimp. Quick but really good. Patio meal!
I drink cheap beer so I can afford good bourbon.

Ok - swap 'fun' for 'weak willed'.  I will accept your rule change and post imagery tomorrow.

On short notice with a pork belly I would recommend pork belly burnt ends or pork belly banh mi.

I would remove the spares and cook them separately and do belly burnt ends with the rest. Or bacon.  Because bacon.

Hadn't thought of that.  I have zero meat wrangling skills, confidence or tools. However, I am enormously tempted by bacon (obviously).  Bacon = mermaid of the meat ocean.

Once sufficient new good boy credits are earned I will have a stab at smoking some bacon.

Bacon is actually really easy and it’s always worth the effort.

Because I like you @Foghorn I have dressed as requested.  This doesn't mean I am your plaything.   Further requests might require wine.

I am sure you will be thrilled to see that I am observing strict corona-rules and using the only know substance impervious to the virus,  other than @nolaegghead at 0300hrs.

    Couple of bits of admin while I'm on;
    1) Football not soccer
    2) Shirt not jersey
    3) Pants on, as are my shorts.   I selected today's pair from the 'weekend, recreational' side of undergarment drawer B.   Since you asked, yes - I follow the standard convention;  Drawer A; formal & business  Drawer B; informal & recreational  Drawer C; seasonal & 'humorous'.    I am not a savage.
    4) football kit,  not uniform - I know you didn't say that, but just FYI.
I really do know how to win friends, right?

Yes, I am now 2 months overdue a haircut.  I waited too long, should have clipped sooner.  Now look like Ron Burgundy.
I think we won the right to decide what things are called after the Surrender at Yorktown in 1781 pal. 😉
