    Anne boiled this ham in coke, took off the slin and then added sugar and cloves to the fat. Finished off in the MMX.

    Have fun with the cook and follow-on eats.

    Decided to go with something different and made some Philly cheese steak sandwiches for dinner. Local, artisanal baguette. Fried onion and bell peppers. Filet mignon. Mayo. Monterrey Jack with jalapeño. The sandwich addict that I live with was satisfied.

    @lousubcap, I knew those beef ribs would draw you out like a moth to a flame.

    My daughter asked me if I could cook her some short rib meat for a meal she wants to cook tomorrow.  I had an opportunity to cook from home today so I want to the butcher shop.

    There's only 3 ribs on the plate ribs, I thought.

    The choice angus beef ribs are only $9.99/lb, I thought.

    I'll just get two - you know - because - I thought.

    The butcher wrapped them up and handed them to me.  It was a fairly heavy package.  Imagine my surprise when I looked at the price label and it was over $120.  Over 12 pounds of beefy goodness.

    @Foghorn -I don't care about losing my wings-those are worth it every time.  You have raised your daughter with exceptional taste and the obvious daddy hook that deservedly merits recognition and reward.  Great eats await.

    It looks like more of a brisket than most briskets.

  • some great looking cooks here.   

    over the last little while i've been very lucky and have been able to egg all of our favourites to name a few Brisket, Pulled Pork, Beef Rib, pork baby backs, Side ribs, pastrami smoked turkey, smoked pulled chicken, wings, Lamb Kofta, Gyros and of course pizza lots of pizza.. LOL 

    i'm looking for something new ideas i'm all eras..

    Channeling SoCalTim tonight and cooking my first tri tip. It was one of the already marinated ones from Costco. 

    Plan is to go reverse sear- indirect till 110 and then a heavy sear to 135 (which seems to be the popular finishing temp).
