    Experimenting with a rotisserie chicken to attain crisp skin. So far so good, better than the first attempt. @lousubcap @frazzdaddy this is the setup I was talking about.

    Looking at options for new TVs.   We discovered that the one we had up in the bonus room is kaput.
    Are you replacing the kaput one with a new TV or moving old ones around and getting new main TV?

    I've had several pieces of mail take 4 weeks. A check from me to consultant.  They wanted it before end of 2020 for tax purposes.  Michigan to Ohio took 3 days shy of one month and they got the check 2 weeks too late. Another Christmas present envelope... sent December 9 from NJ got to me in MI on 1/6/21. I don't know how people paying regular bills thru the mail via live check stand a chance.

    @alaskanassasin Yep.  But what you can’t tell from that picture is that the truck and lift are on a good slope and there was not enough clearance for me to put the tongue wheels down. So I thought I would try it attached. It worked.

    @SciAggie - that is a meteorite of beauty right there.  Great plate and sweet fire pit.  I inhale that protein.  Guess the pit's assignment was to remove the snow?   B)
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    @lousubcap For a run-of-the-mill choice grade brisket it was really good. 
    The fire pit is a good excuse to spend time with the wife while enjoying an adult beverage. 
    In days to come I hope to be able to share this space with friends.

    I would recommend the Sony A8H. I bought one on Black Friday and love it. The screen is the TV speaker so the sound is good and the picture is unreal. If you have a home theatre store nearby go check it out. You will be able to get a better idea of what the picture will look like in your house as opposed to the brightly lit big box stores.

    Bottom left = Argentinian Chorizo

    Top left = Columbiano

    Top right = Jalapeño cheddar

    Thanks for the tip.  Looks like a great set.  I like the idea of the sound coming through the screen.  

    Did you get a sound bar to go with it?  We have one with our current set (an LG) and I don't really care for it, as it has its own remote.

    @Foghorn Is there a favorite? As I get into sausage making, there are more sausages to try than I have freezer space or calorie allotment to accommodate.

    @SciAggie, I frankly loved them all, especially the TX Funk.  The Columbiano got a slight edge in the consensus vote.

    With that said, after I posted the pic earlier I thought back about how good they were.  

    I've frankly never had a venison sausage that I thought was great.  "Solid" or "pretty good" was always as good a venison gets - recognizing that they are typically 50% venison and 50% pork shoulder, so the resulting mix is about 15% fat.

    These were all outstanding - but that has become my new norm from working with @The Cen-Tex Smoker, @20stone, and @caliking.  

    The Argentinian Chorizo HAS to be served with chimichurri.  By itself it is somewhat plain, but it really pops with the chimichurri - like pulled pork when you get the vinegar BBQ sauce just right.  We had it with a Texas Malbec because that seemed most appropriate.  

    The TX Funk with higher venison content, homemade sriracha dust, Hungarian paprika, and pickled jalapenos was awesome.  It had some heat that wasn't overbearing but persisted.

    And the jalapeno cheddar was just great.

    @Foghorn Thanks for the thoughtful response. This sausage thing is quite the (delicious) rabbit hole for sure. 
    @The Cen-Tex Smoker @20stone and @caliking are a crew for sure. They have an uncanny ability to poke you at juuuuust the right time - to get you to do something (that you wanted to do) - but needed a nudge. 
    You will be pleased to know I had the chance to return the favor for at least one of them :)
    When you get @lkapigian involved it’s even worse (salami, salumi, fermented hot sauce...). My wife is like, who is going to eat all this stuff?
