@SciAggie, I frankly loved them all, especially the TX Funk. The Columbiano got a slight edge in the consensus vote.
With that said, after I posted the pic earlier I thought back about how good they were.
I've frankly never had a venison sausage that I thought was great. "Solid" or "pretty good" was always as good a venison gets - recognizing that they are typically 50% venison and 50% pork shoulder, so the resulting mix is about 15% fat.
These were all outstanding - but that has become my new norm from working with @The Cen-Tex Smoker, @20stone, and @caliking.
The Argentinian Chorizo HAS to be served with chimichurri. By itself it is somewhat plain, but it really pops with the chimichurri - like pulled pork when you get the vinegar BBQ sauce just right. We had it with a Texas Malbec because that seemed most appropriate.
The TX Funk with higher venison content, homemade sriracha dust, Hungarian paprika, and pickled jalapenos was awesome. It had some heat that wasn't overbearing but persisted.

@Foghorn Thanks for the thoughtful response. This sausage thing is quite the (delicious) rabbit hole for sure.@The Cen-Tex Smoker @20stone and @caliking are a crew for sure. They have an uncanny ability to poke you at juuuuust the right time - to get you to do something (that you wanted to do) - but needed a nudge.You will be pleased to know I had the chance to return the favor for at least one of them
When you get @lkapigian involved it’s even worse (salami, salumi, fermented hot sauce...). My wife is like, who is going to eat all this stuff?
