@lkapigian cooking it aged will be awesome. I’d put it through slicer and put it on pizza (if I was eating pizza right now).  A little crispy on the aged fat is awesome.

    Hope all is well, when I did Guanciale a while back I did cure 2 and let it ride, was a bit fatty but was good ...a small taste uncooked was plenty, I cooked the rest, I hope I can do the same with pancetta ...your thoughts on cooking it if it's aged .
