Just unwrapped and set on a rack to dry in the bottom of the beer fridge. Plan to cook on Christmas. Should I trim the exterior fat at some point? If so, when and how much?

Used to do these at egging in the mountains back when it started. Smores sandwiches. Raised direct with dome closed couple minutes a side 3 flips like a steak.

This does remind me of a funny story from my parents. They were on some anniversary getaway, rented a nice place up in the NH mountains, had a hot tub. My Dad made it all romantic and put candles around the edge of the tub.
Well my Mom gets in and not long after, my Dad says to her, calmly “I think your hair is on fire.” Now the thing is, my Dad is something of a practical joker (shocking to you all I’m sure), and so... my Mom did not believe him. I guess between the chlorine in the tub she just couldn’t smell her hair burning, and the hot tub itself was plenty hot, so...
So it gets worse, with her hair shooting flames at some point. So my Dad starts yelling at her that her hair is on fire, and my Mom just keeps looking at him like he’s such an ahole. Until... she starts to feel it. Luckily she was close to water and just dunked her head in, but not before a good portion of the back side of her locks had gone up in flames. She came home and it was pretty obvious that something pretty terrible had happened to her hair.

Sharing advice on how to not burn yourself in a wood oven. You learn quickly that sticking your arm in the hotbox in the house is not the same as sticking your arm in a 900+ degree wood oven. I’m a slow learner - meaning I learned the hard way.Coleman, Texas
