    This part isn’t doing anything for you, and will just be a big ass chunk of wet fat on the plate. Takes a few weeks for that to really dry out. 

    You can trim off the really thick fat there, and some will even french the bone. 

    If you want a clean presentation (guests etc.) frenching the rib ends is great. You can make the paper hats for them too. 

    If it is just for immediate family and there’s no fanciness required, just trim the fat and leave the ribs untouched. The meat between those ribs is fantastic. 

    See the red dotted line and cross hatching in the pic below. Leave a quarter inch of fat after you take out that huge hunk.

    Two things:

    i) your garage is so clean it makes me sick; and 
    ii) does your Rockwood always hide in the upper corners like it’s afraid you’re coming for it?
    It took a lot of work to get to this point.  Over 6 trips with donations.  Just parked inside for the first time in a while. 

    I was hoarding er uh stocking up on RW.  Had to put it where it fit.

    The first day in awhile where I had a chance to sleep in. Except for my next door neighbor who works from home felt that he needed to use his snowblower at 6:25 this morning. Ugh. 

    I've needed to go to the grocery store this morning. I'm waiting until at least 8am before I think about starting up my snowblower and plowing out the driveway.

    Checked for Rockwood since I was in ACE. Nope. Asked if they knew what the deal was. Nope. Bought another brand and while checking out clerk said he looked at the delivery log and shows their next scheduled shipment is February. Bummer.

    @Botch Didn’t want to go off topic in the vaccine thread. You reminded me of something when you wrote, “ There's a sentence I never expected to write. “

    If you have ever seen the movie “October Sky” then you are familiar with name Quentin. When Quentin passed away last year my rocketry students were tasked with restoring one of the “Miss Riley” rockets from the movie. One of Quentin’s requests was to have some of his ashes launched in the rocket. So to the point - I never expected that while in my role as a teacher I would ever be Googling to find the density of human ashes. (Had to account for stability) I fully expected the school network filters to lock me down on that one...

    You would be equally amused at our deployment solution, but that’s another story.

    Got a 5lb turkey breast brining and prepping some sides. Gonna pre boil the potatoes and parsnips then roast them with the onions and garlic under the turkey then make mashed potatoes out of it. Pre boiling the carrots as well and roasting them with the brussels.

    That stinks.  I was surprised it was back in stock at my ACE yesterday.  I thought the drought was over! Since grilling season is over for half the country and all. . .
