  • Don’t ask me why or how, but I tasted the “beef brisket” at SeaWorld and I’m pretty sure they just carved up an orca or some other beast that had died in captivity. Same for the “pork ribs.” The chicken was surprisingly good in comparison. On the plus side, I guess technically I dined on the waterfront.

    Definitely working the waterfront angle quite vigorously right there.  But full marks for making it happen.  Enjoy the remainder of time in FL.

  • Made another pie this morning.  Getting lots of requests for lemon meringue pies.  Need to figure out how to get the nice darker peaks.  Will also start making more meringue, I think a real thick tall meringue layer presents better.




    Do you have one of those little hand torches that people use to make creme brulee and whatnot?  I'd think something like that could be used to give you the effects you want. 
    Yes I do, and I use it for creme brulee.  That is a great idea.  I have some other things to dial in too.

    True dat @alaskanassasin - although the only food work I did at Disney was when I  was tasked with putting frozen ice cubes of 144 frozen hot dogs into a sink for just long enough to separate them.  Then I would dry them and put them on a bun and put the dog/bun into a foil pouch.  Then we would put the pouches with dogs/buns onto racks that could be put into warming/cooking cabinets.  I vowed not to spend my hard earned money on a Tomorrowland Terrace hot dog ever again...

    One of my dogs who likes to sleep outside started barking around 600am, so I did the sensible thing and turned out the other 3.  Well, I should have popped my head out first.  There was a worker trying to figure out the best way to drag there hoses into the back yard.  Luckily 3 of the 4 mind well and recalled when I asked.  The littlest one (9lbs) is the ferocious terror who I had to walk out and get.  No workers have showed up before 730am, so this was a surprise for all of us.

    When that sickle cell gene therapy tested successfully, I think we entered a new phase of medical treatment where we can start looking to fix genetic defects.  This is exciting as previously there's been to preventative treatment for anything genetic.

    Is being a moron something we can fix?  If so, I know of some candidates for testing.

    Combatting natural selection by fixing individual problems vs creating ‘best in class’

    Think of it like elective surgery vs medically necessary surgery

    and I agree with JIC above

    That being said, it’s only a slippery slope for people that give weight to ethics, there will already be people/countries trying to create 10’ people, can’t prevent that.

    Not exactly the bright side, but there will no doubt be some horrific failures when people try to create super humans via gene editing.

    Quick lunch cook and prep for Instant Pot Pinto Beans.






    Had some the regular Conecuh on rolls for lunch. No pics as I was hungry.


    Smoked andouille, 1 cup chopped onion, 8 cups of water, and bag of pinto beans. Starting to smell good in the house. Will post picture of finished product later.
