I've read this is good for flats. I have a 9lb packer to do this weekend for the Seattle game, and I really want to hit a home run. Will this work for a 9 lb packer? And if I don't have access to Allegro, I can use beef broth instead?

@SeahawksEGGHead-With the whole packer you may want to "follow along" (minus the adult beverages-or you may lose your way:)) with the brisket camp this Saturday and go with the more traditional brisket cook. However, since Travis developed this method with packers you could use his approach. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Hey @travistrick, I went looking for Allegro marinade that you use in the recipe, and found two. Have you tried the brisket sauce for the recipe, or the original? Didn't find the Hot & Spicy.

I'm doing another Travis for the office tomorrow, putting it on tonight. I believe the last one I did I placed the brisket in the marinate over night? Was that right, or would the liquid soak in too much? Are you still cooking it in the pan, or placing it over the pan and letting it drip into the pan?

Who was the dillhole that said you @travisstrick were a "hack" and "why don't you go boil some meat". ) Sounds like your method is renowned and used by many. Can I use a chuck roast for this?Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now).

Trying this method for the first time today... Its 16 and windy out, wanted some simple way to cook my flat. Cooking a 7 pounder. Will the liquid in the pan dry up if this thing cooks for 7 or 8 hours? Anyone add more water to the pan during the cook?
