    Travis style catches hell but it's good. Had a brisket requested but didn't have time for a packer. Cooked the 7lb flat at 250 on the grid with post oak for 3 hours and then in the pan with Shiner and Allegro. Damn good flat. I hate the flat but I would've eaten that one. Bagged and delivered with good reviews. Nice smoke and tenderness.

    @henapple‌... I'm SURE this is a stupid question but--- why can't I find "post oak"? I'd love to use it on my next brisky.

    @NPHuskerFL - it might not be called that there.  It grows all over Florida, at least in the drier areas.  It has no value as lumber other than posts (excellent rot resistance) and smoke wood.   About as good a lumber tree as mesquite.  Your best bet is to learn to identify the tree and keep an eye open and a chainsaw fueled up in your truck. 

    You can use any oak, however.  People use what grows around them.  Technique and meat quality make the Q.  Just like you can't really taste the mustard under the rub, or all that coffee you added to the meat doesn't really taste like a cup o steamin' Starbucks, getting good smoke is more important than the species of smoke wood.  That difference comes out all things equal.

    I don't get involved in all these lump brand **** fights because I feel like I can make a small concentrated fire and compensate for what people consider "crummy" lump brands (by getting good smoke through good hot fire).  Mostly this is lump that's less combusted (better yield) than other brands, but there's a lot of variability from batch to batch within most colliers to have "good" and "bad" batches.

    Sparking and hard-to-light, etc. characteristics of lump don't bother me (except when I burned my face a couple weeks ago with a rogue ember).  Man up, I say.  Make what you have work like they did on the family farm.

    On the lump. I only got pissed when I found plastic & rubber in 6 individual 20# bags of lump. Solution: I don't buy that particular brand anymore. And one other brand sparked like the 4th of July (the entire cook which concerned me in regards to hot embers). I use WGWW and I stick with it cuz it works 4 me and it's reasonably priced and available locally. If I didn't want any smoke whatsoever I'd use a gasser (period). **** about smoke and use a BGE :-? Need to learn the basics of creosote and learn the BGE before crying about how bad a particular brand of lump "sucks". Just my .02

    Different (a red oak vs white), but a search of the interwebs tells me these two grow together in the East coast, including FL.

    My neighbor has some nice Blackjack. I just did some AC work for him and have some more to do. Sniff....I smell Blackjack Oak in my next brisky's future. ;)
