FWIW, Rome was a favourite trip of ours. So much to see. St-Peters is a knockout. Such a vibrant city. Merchants and their families along the Tiber in the wee hours of the morning when we were there.
Had some neighbours go to Kyoto recently. Still haven’t heard their feedback, but it seems like an amazing city, by all accounts.
Also, props to the art major. A few art majors in this household - some of whom make a good living in their field. -

From my perspective their quality rebounded somewhat but has not recovered to where it was. One of my major issues is the poor pre-trim they get before packaging. Hopefully you are able to avoid that.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -

Hopefully you are able to avoid that.I hear you. My last one was really fatty, and I tend to trim aggressively to begin with, so lots of weight ($) lost right there. The truth is that alternatives here tend to be really pricey, making the Costco offerings a good deal regardless. I remember being ecstatic about Costco starting to carry full briskets a few years back. I posted about it here at that time.As I was typing this, for interest’s sake, I pulled the brisket out of the fridge (wifey put the other in the freezer so I won’t venture there). After discount, this one came in at $59.38 CAD for 4.962kg for AAA (roughly $43.60 USD for 10.94lbs, as you well know - *nod*). Looking at it closely, this one is very tender and may be one of the leanest packers I’ve ever purchased - has even been trimmed bald or otherwise the fat paper thin in some places. This bolsters your comment about sloppy trim, but this particular specimen also works in my favour in some respects.Taking a page from your playbook, one of the briskets (as well pulled pork and a variety of other items) will be cooked and vac sealed for others warranting support. To be delivered with some other items (pulled pork, etc.). My wife has a cousin who had a major aneurysm last year (while driving; but in the company of a former firefighter, who is credited with saving his life). At 40 yo, he’s now non-verbal and has lost most of his physical mobility. Stark contrast to the young man I played pool and double dated with while I was then dating his cousin. His parents have become his full-time caregivers and have had to pump large sums into renovating their home just to accommodate his wheelchair. Many lives changed irreparably and in punishingly-restrictive ways.Not being sanctimonious, but am transcribing my thoughts as I think about the “bad day” I think I had at work. Appreciate every moment.
