@Ozzie_Isaac 1.5% salt .25% cure 1 .2% black pepper .4% dried crushed Calabrian peppers .4% crushed fennel.4% smoked paprika ....just enough liquid to blend and thin it out so you can spread it on the slices ...i didn't want to just " mix by hand" the pork as I didn't want to destroy the slices ...Visalia, Ca @lkapigian
