Coppa " Money Muscle " Jerky

Doing some snack sticks so I broke out the Coppa from the butts 



Sliced about 8 MM




Calabbrese style ...dry marinade overnight and onto the racks 



10 hours @ 160....Better than expected ...thanks for looking

    Thanks all...it is excellent, a bit oily @ the end but blotted it with paper tiwels and that was all that was needed ...

    @Ozzie_Isaac 1.5% salt .25% cure 1 .2% black pepper .4% dried crushed Calabrian peppers .4% crushed fennel.4% smoked paprika ....just enough liquid to blend and thin it out so you can spread it on the slices ...i didn't want to just " mix by hand" the pork as I didn't want to destroy the slices ...

    Bridget stopped by Trader Joes on the way home from work.  They had the calabrian peppers in oil.  (I put a dent in the huge dried calabrian pepper jar)
