    That’s a genius idea.
    Coleman, Texas
Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

@Ozzie_Isaac 1.5% salt .25% cure 1 .2% black pepper .4% dried crushed Calabrian peppers .4% crushed fennel.4% smoked paprika ....just enough liquid to blend and thin it out so you can spread it on the slices ...i didn't want to just " mix by hand" the pork as I didn't want to destroy the slices ...

    phenomenal!

Bridget stopped by Trader Joes on the way home from work.  They had the calabrian peppers in oil.  (I put a dent in the huge dried calabrian pepper jar)

She sent me this picture of the refrigerated section from wed:

WOW this is great - I make a Calabrian oil that goes in every tomato based pizza we make - interesting flavors that are not just heat.
