    My 7 year old daughter demands pork belly regularly. I buy a whole from Costco. Portion out and vac pack for easy defrosting. Usually with baby backs or a big ass brisket

    No pix so it didn't happen.  But, my local Harmon's (chain groc here in UT) started roasting Hatch chile in the parking lot this weekend, and their butchers started offering Green Chile/Cheese pork sausages, and I picked up a pkg, grilled them up and OMGWTFBBQ, they were delicious, easily the best grilled sausages I've had.  
    Now I'm again debating whether to buy a small chest freezer for the basement, so I can load it up with these sausages, another bushel of green chile dumped in ice water vs. steamed in a garbage bag (per one member here whose name I've forgotten, is involved with a salsa business).

    @Botch- just do it.  You will appreciate the ability to cook 'em long after today.

    got my egg-jo back this morning and made breakfast of sausages and pancakes. Sunday morning pancakes are a tradition, usually done on the two burner CI griddle I inherited from my folks. My daughter has been pushing for pancakes on the egg with grill marks. Very important, it's all about the grill marks for her.

    not bad for a first attempt. Direct at 400F, CI half moon plancha and CI grill.

    sausages were done too fast and the centers could have been more cooked, should have done them when still coming up to temperature

    i started adding grill marks about 2/3 of the way through - the trick is to under cook the first side, then fully cook the second side, then toss the first side back down onto the open grill while you pour the batter for the next round. then immediately remove the grill side pancakes onto the resting plate.





    The best of the batch didn't get a picture because my son is a human vacuum at the table.   Today's tea was Russian Caravan a very smokey blend that today didn't taste smokey at all. hmmmm.

    I think that’s the 2nd time today we’ve seen “the good China” in action.   I’m a fan of all the above.   

    Anaheim or poblano pepper?   Looks a touch too big for hatch but could be, right time of year.

    Anaheim, wish it was a Hatch.

    I really like Pablanos, but I find their skin to be much more difficult to peel off.  So, unless I am doing chile relleno I stick to Anaheim .

  • Thank you! They were very good but my photos suck. I had to alter the herbs and spices a bit for what I had in the pantry but I basically followed the recipe in the video below. I'll definitely make these again.

    I tried a recipe that Sam TCG did a day or two ago; it was sent to him by a viewer and he made a couple mods, and so did I, and it wasn't very good in the end.  Chicken thighs are browned skin-side down in a hot CI skillet, then flipped for a couple more minutes, then removed (not cooked thru at this point).  A sauce is made in the pan's fat with garlic, cheekun broth, heavy cream, lotsa lemon juice, and fresh thyme.  Thighs are returned to the pan, along with cherry tomatoes and spinach, and into a 400º oven for twenty minutes.  
    I tried to crisp up the skin on the Small, but it only had time to get leathery, not crisp.  Cooked the rest in a pan then added the grilled chicken:
     

     
    One mod that Sam made, and I followed, was to substitute coconut cream for the heavy cream.  I'm sure I've worked with coconut milk before, but not cream.  OMGWTFBBQ, it's sweet!  I checked the can, 36% sugar!  I didn't have any regular cream so I pressed ahead with the coconut.  It wasn't thick & white like Sam's, but the sickly thin tan you see above, even though I stirred it for a good 6, 7 minutes.  
    A couple of commenters suggested adding the spinach after the 20 minutes in the oven, just dumped on top and lidded for five minutes to let it steam down.  This made sense to me so I did that:
     

     
    Only the leaves at the bottom softened at all, but that's okay with me.  Plated:
     

     
    So, leathery skin and waaayyy too sweet for me, but the lemon/coconut did taste good with the chicken.  Have three more meals of it to choke down, not sure I'll be trying this again (if I do it'll be with heavy cream and maybe some flaked coconut).  
     
    EDIT:  Oh, and I'm swearing off fresh thyme for the rest of my days.  Everyone on TV/EweTube grabs a sprig, and it's 8" long and just a single stem, very easy to strip the leaves off, but any thyme I buy/grow has more branches all over the place and nearly impossible to strip.  Screw it.
