    My wife and I worked in the yard all afternoon. I had Cheerios for supper.

    Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

    I've wanted to do the whole chix, but get/am lazy. You did this with just the quarters? Have been looking for new (to me) chix cooks, so this is on the list now.

    @caliking - Leg quarter, so much simpler for a non surgeon.  There are a couple of youtube videos worth the look.  The key I found thru a video was that you will likely have a section of the ribs included with the quarter.  Easy to address given you know it's there.  
    You owe it to yourself to wrestle with the whole chix at least once.  After that experience you will definitely appreciate the Jacques Pepin skill set, even if it may have been a few takes.

    A few months ago a poster mentioned giving the above a go with leg quarters.
    Much less challenging for me (the non-surgeon):  A couple of pics:


    Took around 45 minutes very raised direct at 350-375*F.
    And the $$ shot: (Dark meat for the win.) 

    Stuffed with sun dried tomatoes, pesto, heavy garlic and some pepper jack cheese.  Definitely worth a rewind.

    Chicken breast with hot and sweet Italian sausages.   Served with pintos, matters and cornbread.   Simple and GOOD.

    Be careful when following the masses. Sometimes the M is silent.
