Irrespective of the recipe book, have you wok’d on the Egg before? Make sure you have some good, heat-resistant gloves and as you know with wok cooking, mise-en-place is essential.

The recipe here was the one in the book for Chinese-American Kung Pao chicken, by the way. It’s got some heat, but not overpowering for my tastes.JohnInCarolina said:very happy how this turned out:

That book has some great recipes, but it really shines for technique. Some that stand IMO, out are water velveting, pouring the sauce around the periphery vs. right in the middle, and adding some liquid to the dry ingredients when breading protein for frying. Instant Pot dinner, twenty minutes, start to finish. The fish and rice were cooked separately, but there’s a chance they could be done simultaneously, using separate containers in the IP.Wonderful flavors.
