    There are many things in my life I have eaten that could be considered "NFW by others" and likely much more "garbage quality" but now, being old @Botch by my low standards NFW right there.  Happy Halloween.
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    2-XLs ,MM,blackstone,Ooni koda 16,R&V works 8.5 gallon fryer,express smoker and 40" smoking cajun

    @texaswig -That is a great looking dish right there.  Nailed it.  Magazine quality photo.

    So I've gotta push back on the Momofuku stuff. Their soy sauce doesn't taste any better than commodity Kikkoman or Yamasa to me. Their season salts are very good though.

    Now that we're heading into fall weather, I've been thinking of oxtail stews and braised stuff, and this looks like it fits the bill. Could you share some deets?

    I sort of agree with you. I bought their soy and tamari, but can't say that i was impressed enough to buy again. I do think its better than Kikkoman, though. 

    There's the fancy crack shoyu (Mizunara) on Amazon, which is pretty damn good. Pricey to be cooking with, though. I've tried Kishibori shoyu (also on Amazon, and thought it was pretty good. And, a bit cheaper than the Mizunara.

    The Momofuku salts are indeed very good. I bought a bag of the spicy one.

    I like Lao Gan Ma.  I haven’t tried the Fly by Jing; that’s $14/6 oz locally; the Lao Gan Ma is $4/7.4 oz

    The Fly By Jing and Momofuku chili crisps are tasty, but its hard to beat Lao Gan Ma for price. My local Kroger even carries it now.

    I'm on my third bottle, but only use it at the table/dipping sauces.  Have a quart bottle of Kikkoman's for cooking and marinating.

    These are just ramen noodles. No broth this time. I used Lao Gan Ma. Pretty sure it's the world's most popular brand. I can buy it local and it's cheap. Haven't had any in the fancy stuff yet. But soon I do plan on making my own just to try.

    I highly recommend making your own. It'll be hard to buy something better.
