Kroger at STL cut spares on sale a couple weeks ago. Bought a couple racks and threw in the freezer. Decided to cook one tonight. First time cutting them up. Went every two bones and cut. Really like this. Was able to move them around and pull the thinner ones earlier thank the thick portion. Also more bark.Large and Small BGECentral, IL

First time doing beef short ribs. Will do again. Oakridge signature black ops rub (rip 2022) and mesquite chunks. Followed the instructions at Nibble Me This and plowed through a stall and a windy drizzle weather spot. Really happy with the taste and texture but the sliced pic doesn’t scream best in show. So maybe that is appropriately similar to picking up a nice cowboy hat and when you look inside the label says “like hell it’s yours”. Works for me. Looking forward to several days of these in several ways.

Neighbor sort of roped me into helping him cook for an event he was organizing.
I did about 50 chix of chicken tikka.And helped him throw down 2 YUGE pots of goat biryani. About 80lbs of goat in the 2 pots.
The biryani was the best I've had in years. The dude is a master. This was the more difficult type of biryani (kachchi biryani), which involves cooking the raw meat and rice together in the same pot. Its harder to nail, than the type where you layer cooked meat and rice in the same pot.
A couple of pics from the host's ranch. The cattle and chix were imported from Bangladesh.

Unfortunately, I don’t have many pics from the day. I worked like a rented mule for most of it, which in a way reminded me of cooking with (read “for” ) Little Steven at a couple of eggfests. Which was a great memory, by itself.@Canugghead - the big pots of biryani reminded me of weddings in Kolkata. My neighbor is 76yo, and you should have seen him in action. He’s a beast, and doesn’t fark around. Him and his lovely wife prepped everything for this large gathering. I just grilled the chix, and managed the fire for the biryani.If y’all noted the rim of dough on the pot, that’s to seal it, and keep the steam in while everything cooks. This is “dum” style (the-um) style cooking. He handed me 10lbs of flour, and told me to make dough, as he pointed to the pots. I said, “oh… for dum. I got this. Don’t worry.” He gave me that 😑 look, and said “I’m glad you’re here.
