First tritip in awhile for dinner last night. Salt, pepper, garlic, paprika, tiny bit of sugar, and espresso. Little bit of wood for some smoke.Chicago, IL - Large and Small BGE - Weber Gasser and Kettle

Two different detroiters last night in the ooni koda. Crust needs work, it was a bit doughy in the middle but not enough to derail dinner. Maybe a bit heavy handed with the brick cheese as well, but not by much. The top pie is a riff on a pie that Via 313 in Austin had for a while, the Mitch Ryder. No sauce, smoked Gouda on the bottom, Black Forest ham, brick cheese. We added some fresh rosemary and that was a win, drizzle the finished pie with maple syrup.
Bottom pie was more traditional pepperoni, sauce on top, etc.Love you bro! -
@Botch - Lunch Tots. Finally got the chorizo to give the STCG recipe you posted last month a try. First up the green peppers.
Love shallots so I got one ready.
More of the players waiting ,till the tater tots were mostly done in the oven, while the Large egg came up to temperature.
Chorizo on the Large getting ready.
Time for the veggies to join the mix.Starting to put lunch together now.
I put it back in the egg after adding the shredded Kolby and Monterey Jack Cheese.
Messed up the over easy egg but it did not matter. It was very tasty. Thanks for the nudge. This will go in my brunch rotation.Ubi panis, ibi patria.

Not sure, but this is perhaps the greatest thread title on the forum. Only thing better would have been "Dr. Fork"

The thread that prompted its creation was pretty entertaining.
