    @ryantt - you two (Norah Grace) brought the A game right there.  She gets the styling angle.  Magazine quality photos as well.  Definitely a banquet!

    Thanks, although didn't that user say that clean forks were OK?   :)

    It is basically a very well spiced vegetable mash (this had onion, bell pepper, cauliflower, potato, and peas) on a buttery roll.  It was described as street food, but I don't know if the rolls weren't toasted enough, or we needed to cook off some more liquid, but eating with your hands like a sandwich wasn't an option.  It was very tasty with a fork and knife as an open faced sandwich though.

    The usual MO is a slightly sweet roll (think Hawaiian rolls), buttered and griddled, served on the side. Folks either dip it in the veg as they eat, or take bites of it with a spoonful of  the bhaji. 

    I'd love some of that :)

    Thanks!  We used Costco ciabatta rolls because we had them on hand, but the Hawaiian would be better.  That's actually how my wife ended up eating it; she griddled the rolls in a CI skillet and could only fit in 2 at a time - my daughter and I got the first 2. She saw how much trouble we were having, so put her pav in a bowl and would spoon out onto the bread, take that bite, and repeat.

    It's very similar to the recipe I've been using the last 4-5 batches. The one I've been using has soy sauce, worcestershire, chili paste, garlic, pepper, and brown sugar. I've left out liquid smoke but I should give it a try one of these times.
