African peanut stew. SV’d the chicken for maximum tenderness.

Looks delicious! I've been wanting to make this for quite a while.

    Tonight’s dinner, Korean braised chicken.

Last night’s minestrone, with a generous serving of bomba sauce.  Not pictured, toasted leftover baguette.
    Recipe for the Korean dish?

    @caliking

Thanks. I actually thought of you when I was prepping the garlic. Explanation as to why below.

Very much worth making, IMO. I had made it once before several years back, but I was really happy with this go.

I made just a few adjustments, some purposefully and others because that’s what I had in the fridge and pantry.

    - I reduced it greatly to give it a stew consistency rather than a soup, partly to intensify flavours and partly because I wanted something I could serve over rice. This also helped me get the potato to the exact doneness I wanted it. If making soup, I recommend you par boil the potatoes.
    - used much more garlic and ginger than was called for. Easily at least two or three times.
    - used pickled jalapeños rather than fresh, and used more than what was called for.
    - added a shake or two of garam masala.
    - used much more tomato paste than was called for.
    - used crunchy peanut butter rather than smooth.
    - used spinach rather than kale.
    - garnished with peanuts and green onion rather than cilantro.

Easy peasy Asian-ish salmon in the IP. Ten minutes, from prep to plate, and pretty damn delicious. Served with bok choy, and ginger scallion noodles.

Looks good, what setting and how long in IP?
we had steamed salmon with plain rice couple of nights ago … IIRC swmbo sauté chopped fermented black bean, garlic, ginger, chili, green onion, cilantro; spread over salmon and steam between 12 to 18 min depending on thickness.

High pressure x4mins, then release pressure manually.

-Set up the IP with water 1 cup in the pot, and the trivet. The fish goes in a large tiffin carrier pan, that fits our 6qt IP. I stack two pans in the IP, separated by bamboo skewers between them.

    - I made the sauce with soy sauce 1/3 cup, mirin 2 T, DP Peking. Pour the sauce in the pan. Place the salmon filet face down in the pan, to swim in the sauce a bit.

    - When ready to cook, flip it over, chop some scallions over it, and pressure cook.

    - Spoon the sauce over the fish prior to serving, or onto rice/noodles.

Didn't add ginger or garlic this time, because the sides would have them.

For your recipe, try adding all the ingredients directly (without sauteeing first), and see what you think.

This is probably the quickest dinner I can make, that starts from scratch.

Another lazy meal. Used some of the sausage I cooked on the egg the other day. Instant Pot hard boiled eggs. The rest - tomato, onion, peppers, baby carrots, the salad mix, and the ranch dressing came from the grocery store.
