I’ll start by saying we don’t eat/cook much fish…but recently we’ve been looking at some of Brent’s old cooks and feeling like we wanted to try. So tonight, Barramundi with a brown butter and lemon sauce. Here are a few photos of our efforts. The difference between overdone and perfect is 30 seconds. (I think we were a little over).

@ryantt - Way to branch out. Barramundi is scarce in these parts. The plated photos are impressive. I have not had it in many years. Looks like a winner from here. Isn’t much, but it is one of my favorite meals. Cedar plank salmon with Spicy Pineapple Head and drizzled with some Mike’s Hot Honey, salad and broccoli cheddar rice.

Cooking up a batch of baked beans for the early February 'summer' BBQ.

Made with smoked ribs (rather than bacon), Caramelized the onions and garlic, pureed tomatoes, molasses, dark brown sugar, dried mustard, Chipotle powder (for a touch of kick), worcestershire sauce, onion power, garlic powder. -
trying to broaden our eating horizons… So today we had a Italian chicken sausage sweet potato and kale soup.

Well we have all heard of Key deer on Big Pine Key near Key West but Snake Oil Farms has a new offering from this little pocket farm down there called Key Steer. They are miniature cows but full grown so it’s not cruel like veal. They hardly feel it. I heard instead of cow pies it’s more like cow cupcakes but I was hungry and did not stick around to find out. Was going to do beer can like chicken but if you can imagine the opening would not fit a 16oz can. Probably tells you more about the chicken than it does the cow. So I just let the IPA steam it from the side and you could really smell the aluminum just like at the foundry before they put the bpa lining in. Full disclosure— it took a while for the olive oil smoke to go from a 1970s Waffle House to a current one but all is well that ends well. Well come to think of it what kind of idiot would get a steak at a waffle place. Never mind and if your pee smells funny I hope you remember eating asparagus because if you don’t it might be too late. -
@Buckwoody Egger I read every word of your above post but have no idea about the message. I am confident that the beer can was empty before it was included in a pic that looks remarkably like some sweet lamb chops. But I have been wrong many times and could be again right now. Happy Saturday.

20lb ham in a 140° bath for 8 hours. U


Made a brown sugar, honey, bourbon glaze. Painted up the ham and placed it in a 400° oven for 30 minutes.

@lousubcap After retracing my steps in pursuit of supporting data, I can confirm the following. Any claims of Key Steer T-bone steaks cannot be confirmed to the general public at this time. Also rest assured that if in fact Ted Turner wanted to develop a livestock to replace all his buffalo (and cattle at large) with one whose farts were kinder and gentler to the ozone, he has all the faculties to do so without any assistance from publicity here.
