Jalapeño cheddar summer sausage and goose pastrami. Smoked the pastrami for about 1 hour at 225 with a few chunks of pecan.Not pictured are pig shots and duck fajitas.LBGE

We made fried chicken cutlets with a oven roasted potatoes and broccoli. The sauce is a Dijon mustard cream sauce. The chicken breading has lemon zest, salt, pepper, and DizzyPig Peruvian-ish

Closing the Super Bowl menu post, I mentioned a small Costco prime brisket-
decided to try the foil boat option for the finish-
pic here as it was happening:
Sparse bark on the thin edge of the flat is courtesy of the foil protection during the cook but once the foil was gone it did well.
Now the finish $$ shot:
Definitely moist and flavorful. I am confident the posted "how-to" videos are leaving out some key steps. To the extent I can sort it out, all boat finishes go with fat side up. The bark does suffer a bit for that move residing in the pool.
I will go again but just prior to the FTC step I will dump the accumulated liquid.

Conchiglie al Tonno (shells in spicy tomato tuna sauce):
This dish is normally made with spaghetti, I had a new pasta I wanted to try. Garlic, capers and red chile flakes are sautèed in olive oil, a splash of white wine, then a can of San Marzanos, cooked down 15 minutes or so, then add a jar of good tuna packed in oil, and shred. Add the pasta. Topped with parmesan, spritz of lemon & spring onion, and garlic sourdough toast.

Sous vide.ham Saturday, made stock from the bone Sunday then ham and beans Monday. That turned out to be the best ham stock I have ever made. Will cook my next ham this way again to see if I get the same results.
This was the first time I ever saw my 84 year old father eat them without drowning them in ketchup. My best compliment.
