Pulled one of my Coppa's that I started May 1st ( pork was still cheap ) , Vacuumed sealed for a few weeks of equalization, smells amazing, wanted to cut into it for a money shot but will wait

Jerk thighs, toasted sour dough and roasted feta with tomatoes and small peppers. The feta was supposed to be foil wrapped, but the foil just filled up with liquid, so I put plenty of holes in it and it worked fine. Grilling basket next time.

I don't know if they're having financial woes or what, but something has seemed off with our local Cabela's ever since it opened. Playing with my new toy. My wife got me a Traeger Ranger for Father’s Day. I “burnt it off” today and am currently making naan pizzas for the inaugural cook. I really like this thing so far. It will definitely pair well with the mini and/or small while RV’ing.It also comes with a cast iron griddle which will be great for bacon & eggs while camping.
