Thanks all for the kind words.

@TTC - hope no one was injured.
I have two grown sons (29 and 33 yrs old) who within about 2 weeks of each other accounting for the 4 year age difference had their first wreck.  BTW each also got a speeding ticket early in the licensed driving game.
I checked those boxes in my youth as well.  Must be a genes thing.   B)

Very intrigued.  Do you crush/chop the cloves before or after drying, and with what?

I'm having a hard time coming up with a scenario that would make me voluntarily leave an egging spot like that (food included). Cheers.

@Botch I pulse in food processor before , after put it in a bullet or like processor , blend to desired consistancy , I go for Granulated ....do it once and you'll Gag at the store bought when you compare, same with onion.....

First couple times I just sliced the garlic, too forever, pulsing in a processor first then dring at 120 takes 6-8 hours ....sliced a full day

Headed to dinner to celebrate my oldest sons HS graduation.

He goes to the #3 ranked public HS in the country, Merrol Hyde Magnet School in Hendersonville, TN

His class has an average ACT of 30.8, with six perfect 36 scores, one US Presidential Scholar, and one appointment to West Point.

He is going to the Honors College at Purdue Polytechnic to study Computer Science / Computer Graphics Technology on a 5 year plan to get bachelors and masters.

Best part is that he is a grinder. He is smart but he has to work hard.

And yes I’m bragging like hell. I get really weary when people complain about kids today. I’m my experience they get it a lot more than their elders
    Awesome and congratulations

That’s a lot of garlic to remove the paper skin on. Do you just smash it all to remove the paper first then chop?

First step in the process - buy the big bag of pre-peeled garlic. :)

@TEXASBGE2018 I just put it in a jar and shake it up, 10 heads took about 15 -20 minutes start to finish from bulbs to ready to dehydrate

Tacos! Pastor in the back and adobado up front.

I suck at Al Pastor but I love it so much. I need to get back on the horse. If you like this one do you mind posting the recipe?
I wish I could but I stopped at the Supermercado on the way home since it was a last minute call. But it's honestly head and shoulders better than any I've made from scratch and it's my favorite taco by far!

    so pre marinated?
Yes! I'm sure you could find it in your area at a carniceria. It's $3.69/lb here.

There's a good doc series on Netflix called Taco Chronicles. Episode 1 or 2 is dedicated to Al Pastor. It's a good watch
AL Pastor is my favorite ... I like Hawaiian pizza too.
