    Just woke up to my 4 day weekend. Gonna straighten up the garage then gonna grill something for lunch.

    Thanks - pretty fool proof and can be cooked on the egg while it's preheating. Takes about 3 russets for a 10" cast iron skillet.

    One of my new favorites for an easy side dish... slice up some russets, toss with butter and heavy dose of salt and pepper in a cast iron skillet, arrange the first layer all pretty then dump the rest on top. Remove foil and cook for a few more minutes until the bottom is as crusty and browned as you prefer. Invert onto a plate and slice into triangles. 




    Mexican style grilled leg quarters with rice 'n beans... huge hit

    Ahoy-hoy lads…. it’s game-week 4.  Liverpool with a full 9 points lead the pack and there are 10 teams in 5th place.  Its still early days.

    Let’s pile in to the fun for this weekend;

    Lunchtime Saturday is Ole’s ’burst dream gang’ heading all the way down to Southampton.  A splendid fixture this as last weekend the mighty Palace smashed Utd - just as I predicted (not) and Saints gave the dirty Seagulls a proper learning,  well done them.

    Utd will be stung by last week but are fragile.  Southampton can be good, but are shorn of Nathan Redmond through injury.  Tough to call.  I’m going 1-1.

    Frank Lampard’s Chelsea welcome Sheffield Utd and there will be gaols.  Both teams seem to like attacking and are less concerned about defence.  3-1 Chelsea.

    The mighty Palace host Aston Villa.  Considering Palace’s home form, since like forever, we’ll score one goal at the absolute most. (possibly for the season!)  Villa won’t score more than one, if at all.  Almost certainly jinxing things, but I am going for a 1-0 home win. 

    Leicester v Bournemouth could be a belter.  Two genuine top 6 contenders I reckon.  An early test of those credentials for both.  I’ll go Foxes in a close fought 2-1.

    This week Man City will beat….. Brighton 782-0, hopefully.   I must encourage you to locate a clip of the outrageous sending off achieved last week by Florin Andone of the dirty Seagulls.   As he steps right over the ball and in to the other players’ knee there is a stunned silence around the ground and then an audible groan.  Which is football code for ‘WTF has he just done that for?  Get off you muppet!’. 

    Naively optimistic Newcastle welcome a hapless Watford.  Toon managed to beat the dysfunctional Spurs last week and Watford are now both horrible and useless.  Sadly it means that Toon will probably get more points.  Liking neither team that much I’d prefer them both to lose.  Can’t happen so a tedious nil-all is my desire. 

    West Ham are to be visited by the Canaries, this season’s helter-skelter lets all run around and have fun brigade.  There will be goals here too, possibly 5 and mostly to West Ham.  3-2.

    In the evening is Burnley up against the sprightly Liverpool, the visitors have struggled here in the past but really are on tippy-top form right now.  Hard to not see a Reds win, possibly just 1-0 with a nervy last 15 minutes as Burnley press hard for a leveller. 

    Gloom corner now,  Stoke pop to near neighbours at Birmingham.  Been a tough season already for the Potters - well for @Eoin mostly.  The Blues aren’t exactly setting the place on fire but will probably have enough for this one.  A resounding away win would perk up our dear friend, though - so perhaps we should call it lucky pants day and see if that sparks the recovery? 

    Sunday;

    Everton have Wolves around for late lunch.   The latter have secured progress to the next stage of the Europa League so will be buoyant, though sooner or later exhausted too.  Everton are just a bit ‘meh’.  1-1.

    Closing out the week-end is the North London derby.  It’s come at good time for Arsenal, with Spurs in something of a funk and a muddle right now.  It’s at the Emirates and whilst this match operates outside the rules of ‘form’ I think its got home win all over it.  Could be 8-7,  more likely 2-0 the Gunners. 

    Stay groovy!

    Tomorrow's breakfast.  
    CI skillet and Egg still warm after our steak dinner. 
    Decent bangers and 2 lbs of 'cooking bacon' - all the off cuts and mis-shapes. Mix of smoked and unsmoked, big bits and small bits, but all bacon.

    My wife baby-sat for her pretend granddaughter today.  She sent me a text and asked for country fried pork chops, cream potatoes and gravy.   Sometimes you just want what you want.  

    Be careful when following the masses. Sometimes the M is silent.

    Celebrating!  A small thing, but something I haven't been able to do for years.
     
    Yesterday, bought a rack of baby backs for this weekend.  Tonight, removed the cryopak to remove the silverskin and salt, and then wrap in Saran Wrap and let drybrine overnight.  
    I've learned to let any ribs come up to room temp before removing the silverskin, and to separate the membrane and the ribs in the center of the rack, not a corner; and this time I slid the table knife along a rib bone center, not the meat/skin interface between the bones.  
    Even though I poked thru the membrane a couple times, I was able to pull the membrane completely free, all the way across the rack; squeezed my fingers in, and pulled the entire silverskin free in one pull, no paper towels/pliers, and the whole process took me 20 seconds!  Yay!!
     
    I salted both sides, wrapped in Saran Wrap, and back into the frig.  May post the cook tomorrow.  But, yes, a clean and quick pull of that damn silverskin!

    @JohnInCarolina -given your location the pig will always win and I am biased against using the cow for anything other than pure brisket goodness.  So, great choice and you can continue to use it and the universe will be better for your restraint.  B)
