We celebrated a milestone birthday for our son (40 - when did I get so farking old? 🤬🤬), and his wife’s 37th (both born on 10Sep), by taking them to Blue Hill at Stone Barns.
The evening started with a tour of the farm and a discussion of the work they are doing with several universities and seed companies to develop strains that are drought and pest resistant.
I almost cried seeing this XXL broken - evidently they let it get too hot. When I asked I was told they now use it strictly for roasting onions.
This is an interesting grill where they burn logs down to coals, then spread them to the left and right to be cooked over. If you look at the left side of the table, those large chunks of charcoal are made from the bones of the animals they raise and butcher. They also send some (the white bones in the bowl to the right) to a ceramicist to be made in to bone china water cups that are used in the restaurant. The sausage logs on the right side of the grill was made of 64% oats and 36% pork - probably the most amazing sausage I’ve ever had.
Dinner consisted of 24 courses (most were small bites) served over 3 hours. Everything was fantastic so it was hard to pick a favorite, but the huitlacoche pork taco certainly ranks up there.

Upon leaving Blue Hills, they hand you a little packet that includes the kitchen ticket, a printed menu, a loaf of their whole wheat bread, and a few other things.The menu didn’t include a private tasting of lamb coppa, ribs, and lamb tongue skewers cooked over the live fire grill I posted earlier - amazing.

I didn’t get any!! Also the fries were waffle fries?
