@caliking - you are correct sir. We’ve moved twice since March so life has been nutz . Our house sold quick so we ended up renting until we found the little piece of paradise we were looking for. I’m still cooking and figuring out the salt free diet. Noodles: Ronzoni now makes an 8.8-oz boxed "Homestyle Fetuccini", the noodles are bunched into four bundles, and one bundle is perfect for a single-serving cook when I don't feel like rice/too lazy to make fresh.GrateEggspectations said:That looks great, @botch. Deets?
Stir-fry: I keep a bag of raw, shelled/deveined, tail-off shrimp in the freezer, a single bag does me protein for 5, 6 meals. Sliced 4 cremini mushrooms, and cheated by buying a bag of "Stir-Fried Vegetables" at the market, had broccoli, snow peas, carrot and a few other things in it, no knife work! Sliced up a single scallion for garnish. Sauce, this time, was about 1/2 tsp cornstarch, a bloop of oyster sauce, bloop of soy sauce, maybe 1/2 tsp of black vinegar, a bloop of shaoshing (sp?) two bloops of water, and some black pepper.
Shrimp cook fast, so I stir-fried the mushrooms and scallion whites first, a couple minutes until the 'shrooms were browned. Added the shrimp and bagged veggies, go until the shrimp are almost cooked, then throw in the noodles and re-mixed sauce, kill the heat, and stir until sauce thickens/coats everything (maybe 30 seconds). (and I just realized I forgot any garlic!)
Since learning how to stir-fry decades ago (and re-learning the technique when I got my super-hot BlueStar), I realized how well it works when cooking for one or two. I can buy a 4-pak of thighs and have four completely different meals just by varying the veggies and especially the sauce (I am a condiment maniac). I also often go to the store intent on making beef with green pepper, but end up buying a chunk of pork and broccoli because the peppers looked tired and the pork was on sale. Making some chunky ketchup. This recipe is killer. Highly recommend. https://www.ricardocuisine.com/en/recipes/4398-homemade-chunky-ketchup-the-bestI made it last week but accidentally let the whole batch burn while grabbing my daughter from the bus stop. Not going to let that happen again. I follow the recipe quite closely but sub in pineapple for about half the apples and also use some jalapeños in place of one of the bell peppers.
