    Broke in the black stone with bacon, chicken thighs, and smashed potatoes. Also cranked out some home made ice cream, the kids hit the paddle when I pulled it out like a couple lions on a water buffalo.

    Great finish on that chop.  Lamb for the win.
    Several decades ago (old here-at that time the drinking age was 18 yo) I was fortunate enough to take (for credit) a college course in Wines, Spirits and Beers.  It did include a drinking lab every Thursday afternoon.  Louis Latour was a highly regarded pour.
    I have since walked away from wines but the knowledge I got from that course has served me well over time.  Some important things you never let go.  
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Haven’t posted in a while. Cedar planked salmon and oven roasted green beans.  Keeping it simple tonight. Salmon was rubbed with meat church honey hog.
    Salmon looks wonderful, but the side also has my attention. We have green beans frequently and also roast vegetables frequently, but I have somehow never roasted green beans. Anything special you do with them?

  • Two pack was 11.5 lbs and there is a weight differential of at least a lb. Temp in smaller is 10-15 degrees higher so it goes in the cooler sooner.

  • Super quick scallops and red beans with andouille 
    Louis Camille would be right proud of that Maillard reaction.

    Picked up two packets yesterday. Used about 4 pounds of the flat to start some Flemish beef stew. Just browned it.

    Leftover pulled pork green Chile enchiladas. Trying to do better with reusing leftovers. Turned out pretty good and was easy to make. 
    Nice. We make those all the time.  Great use of leftover pulled pork.
