Day 3 of gluttony - NY Strip steak.
Coleman, Texas
Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

This part isn’t doing anything for you, and will just be a big ass chunk of wet fat on the plate. Takes a few weeks for that to really dry out.shtgunal3 said:
Just unwrapped and set on a rack to dry in the bottom of the beer fridge. Plan to cook on Christmas. Should I trim the exterior fat at some point? If so, when and how much? You can trim off the really thick fat there, and some will even french the bone.If you want a clean presentation (guests etc.) frenching the rib ends is great. You can make the paper hats for them too.If it is just for immediate family and there’s no fanciness required, just trim the fat and leave the ribs untouched. The meat between those ribs is fantastic.See the red dotted line and cross hatching in the pic below. Leave a quarter inch of fat after you take out that huge hunk.
And you absolutely will get a crust. Best ever, if you trim noe and let it dry more.Crust requires dry surface and dry fat. Only predictable way to get it is to dry and then roast low and slow -
Given your troll status, I have to ask whether you cracked a smile in writing “french the bone.”PigBeanUs said:

It took a lot of work to get to this point. Over 6 trips with donations. Just parked inside for the first time in a while.GrateEggspectations said:

ii) does your Rockwood always hide in the upper corners like it’s afraid you’re coming for it?

Closed on a sale of some property I bought in 95 earlier today. 1855 money pit. Was a police station, then a Masonic hall. Historically significant. 3300 square feet, 14 foot ceilings, zero load bearing interior walls. I sold to friend and held the title until he finished paying me. Anyway, relief to be done with it. Fortunately it wasn't my responsibility for the past 12 years.

The first day in awhile where I had a chance to sleep in. Except for my next door neighbor who works from home felt that he needed to use his snowblower at 6:25 this morning. Ugh.poster said:

I've needed to go to the grocery store this morning. I'm waiting until at least 8am before I think about starting up my snowblower and plowing out the driveway.

Checked for Rockwood since I was in ACE. Nope. Asked if they knew what the deal was. Nope. Bought another brand and while checking out clerk said he looked at the delivery log and shows their next scheduled shipment is February. Bummer.

@Botch Didn’t want to go off topic in the vaccine thread. You reminded me of something when you wrote, “ There's a sentence I never expected to write. “If you have ever seen the movie “October Sky” then you are familiar with name Quentin. When Quentin passed away last year my rocketry students were tasked with restoring one of the “Miss Riley” rockets from the movie. One of Quentin’s requests was to have some of his ashes launched in the rocket. So to the point - I never expected that while in my role as a teacher I would ever be Googling to find the density of human ashes. (Had to account for stability) I fully expected the school network filters to lock me down on that one...
You would be equally amused at our deployment solution, but that’s another story.Coleman, Texas

Got a 5lb turkey breast brining and prepping some sides. Gonna pre boil the potatoes and parsnips then roast them with the onions and garlic under the turkey then make mashed potatoes out of it. Pre boiling the carrots as well and roasting them with the brussels.

That stinks. I was surprised it was back in stock at my ACE yesterday. I thought the drought was over! Since grilling season is over for half the country and all. . .GATraveller said:Checked for Rockwood since I was in ACE. Nope. Asked if they knew what the deal was. Nope. A couple of breakfast fattys to take to the family brunch tomorrow. I stuffed them with goat & sharp cheddar cheese, spinach and scrambled eggs. Topped with brown sugar and on the one with hot sausage I dusted with cayenne and pineapple head rub.

Watching my daughter make pasta by hand. It took 26 years for parenthood to pay off. I’m starting to think that it was worth it.
