    Herb butter stuffed breast roulade wrapped in skin (meat glued) ready for the bath. 
    I started out with this on my radar. Even got some meat glue in time. But caliqueen reminded me that we weren’t cooking for 40 people, and that I had to nix my plans for turkey-8-ways.

    Thanks!  The dome tracked about 10 degrees higher.  Probably.  I have to admit I don't watch the dome temp as closely after I get the cook started.

    Oh wow, that's a great turn out. I think most guys are cooking their turkey at 325F to 350F ... so I was wondering about the lower temperature you used.  How did it turn out?

    I guess it was a little misleading and in accurate, now that I'm thinking through my answer to your question, to say an average temperature of 275.

    My intended cooking temp was 325.  I should have given the Egg a little more time to stabilize before loading it up.  The temperature stayed at 240-245 for about an hour after I put the bird on the Egg.  It worked its way higher with a little help from me fiddling with the vents.  For at least the last hour of the 3 hours 15 minutes it took to cook, the grid reading was 325 or higher.

    It turned out pretty well.  Moist, tender, and tasty.  The family was happy.

    Spatchcocked and egged on Tuesday. Heated in the oven at 170 while I did the rest of the meal at a relaxed pace as it was just the two of us at home. 

    Looking forward to the sandwiches.
