@lousubcap that link shows a VERY nice piece of beef!lousubcap said:@DoubleEgger glad they finally finished. I am not affiliated with SRF in any way but should you ever want to experience true brisket (SRF style) on a stick give these beef ribs a go:You will not be disappointed. Last package of 3 that I received weighed 8.7 lbs. Very rich. FWIW- -
Just fired up the egg. I am cooking a whole bone in turkey breast that I spatchcocked and rubbed with bbq rub. My wife had the idea that we should inject it, and use caramelized onions.
I sliced up two bug yellow onions and caramelized them, then put them into the blendtec with a can if beer and turned it all into liquid.
Then I injected the turkey with it, I got at least 30 ounces of the stuff into the breast.
Gave it an extra rub coat too

Cream cheese grits, Kelly’s brisket chili, runny eggs, guac, salsa, sour cream and Mexican crumbling cheese. Needed some cilantro or fresh pico, but just using up stuff in the house and didn’t have it on hand. Not bad. Sorta like huevos rancheros.

Korean BBQ baby backs, sesame potatoes and kimchi. Hit the spot. -
So, the onion injected turkey was a massive home run, one of the best things I've ever cooked in the egg. Bread was pretty good too

I've never injection-brined, had no idea you could get almost 2 lbs of brine into a turkey breast!milesvdustin said:Then I injected the turkey with it, I got at least 30 ounces of the stuff into the breast.

It wasn't a brine, it was just pureed onions and beer.Botch said:

I was surprised at how much it took, but I realized when I cut in there was a big pocket on each side that took most of it in there. Not sure what that was2 LBGE, Blackstone 36, Jumbo Joe

Great to hear! I started injecting this recipe below 3 years ago with turkeys. Along with Mickeys rub under the skin. Once you start injecting you won't want to eat regular turkey any other way. Injecting is where it is at!milesvdustin said:So, the onion injected turkey was a massive home run, one of the best things I've ever cooked in the egg. Bread was pretty good too
Your bread also looks fantastic!

Relaxing after Black Friday .... I didn't shop, but we had wicked storms the night before. A horse knocked a fence down, one donkey and one horse escaped. My horse was injured. So spent the day fixing fences, catching a donkey (this one is a wild burro and does not like being handled), cleaning wounds, and waiting for the vet. During all this two horses started chasing each other in the turnout and one fell and got tangled in the fence. Had to take the fence down to get the horse out. Luckily the horse was just spooked and not injured. If you have never been around horses, they have an ability to get stuck, tangled, trapped, and injured in even the most benign and safe environments.
Luckily injury looked worse than it was, so antibiotics, Bute, Neosporin, and daily cleanings and should be good to go.I would rather light a candle than curse your darkness.
