The Best Turkey Injection EVER!!!
I tried a new Turkey Injection this weekend and it is the best ever. I found it on "About Food" and it's called: Beer n' Butter Poultry Injection. I made one change, it called for Tabasco and I used Texas Pete.
Here it is:
1/2 pound butter1/2 can beer2 tablespoons salt2 tablespoons Worcestershire sauce2 tablespoons Texas Pete or Frank's Red Hott1 tablespoon soy sauce2 teaspoons garlic powder2 teaspoons onion powderI used the entire amount on a 17lb Butter Ball, and rubbed it with Ragaing River.

Every time I have tried an injection that contains butter it clumps back up when its cooled and ready to inject and therefore clogs my injector. Am I the only one with this problem and if so any ideas what Im doing wrong or do I just need a better injector?Here is what I have.Franklin, Tn

Reminds me of the time I had shopped for a weekend party and came back for the beer I also needed butter. As I pulled up three cases of beer and a ton of butter to the grocery counter I could see the look on the checkout girls face. I asked her if she wanted to go to a beer and butter party and her look still brings me a smile from 20 years ago. After she composed herself, she said no. I recommend injecting the turkey the night prior and inject until the turkey refuses anymore. The morning of the cook I'll pull up the skin around the bird and hit it hard with Mickey's coffee rub being careful not to tear the skin while applying Mickey's rub everywhere under the skin.
I smoked the two birds Saturday for dinner and we had leftover sandwiches on Monday. My buddy went straight home and pulled out a frozen turkey to make more. Hahaha! His poor wife.
