To brother Piney, thanks for keeping a eye on Party Monster and not letting him get to drunk or to high. He will run amuck without supervision. You did a great job of keeping him some what coherent and semi sober my friend. I can't call everyone by name as it would take volumes. Nonetheless let me say thank you to everyone for making this a real enjoyable and memorable event. It was truly a honor and a privledge to meet y'all face to face my friends. Now that this event is over, it is my hope that everyone now knows that I'm sincere when I use the terms "my friend" "brother" or "sister". From my first day on the forum I thought of all of y'all as extended family. Now that I have met many of y'all that feeling is even stronger my brothers and sisters. Thank you all for having me and may God bless you my friends. For anyone that missed it or didn't see the pics. Here is the man behind the mask and Party Monster. He is my oldest son.

SGH and I have been building a friendship the last few months, sharing our love for food and special brand of humor and hijinks. I expect this to continue to the very end.
I'm going to shoot an instructional video of SGH making his special stuffed chicken. I haven't been to his crib yet, and it's a great excuse to open up the Cayman on I-10 East of NOLA. I'll have to have the lawyers standing by, as I don't know how redneck five-o is in his neck of the woods. I have a semi-decent camera and tripod, so we'll try putting together something that helps people take advantage of SGH's experience in his brand of BBQ.
Party Monster was a great help in the festivities - he loves lifting heavy stuff. I hate lifting heavy stuff. We make a great team. I love supervising.
We will be creating a massive oyster demand in the next 12 months. Expect oyster prices to increase on the world oyster market because of our future oyster purchases. We're not trying to increase the prices, it's just a natural byproduct of supply and demand.
In conclusion, SGH is real. And he's here to stay. And he's a great guy.
You could even say, "he's the man".

I'm actually friends with brother Flair. Hate to see the hardships that he has been going through the past few years. He is nothing like his wrestling "character". He is a fine man that helped a lot of people. But his world famous quote in full when he was champion was and I quote: In order to be the man you have first got to beat the man. Step up and try if you dare. Whoooooo!!

Back in the early 70's before they were super stars. Brother Flair, Michael Hayes, David Shultz, Terry Gordy, Austin Idol, the Fullers, the Von Eric's the Armstrong's as well as many others all got their start right here on the coast wrestling for the now defunct AWA, NWA, World Class and Mid South wrestling alliance. Back in that era the main way to get from Biloxi to Mobile and vice versa was Airport Blvd/HWY 614. The stop sign at the intersection they had to come through is about 10 seconds from my other home where I grew up. There use to be a small cafe at this intersection. @SGH I grew up outside of Houston and grew up a big fan of Mid South wresting. Junkyard Dog was my favorite growing up w Kerry Von Eric being a close 2d. Can't hear Tom Sawyer by Rush w/o thinking of him.=======================================

@thetrim Man that was the good ole days brother. Do you remember his partner Burr Head Jones? Burr Head was real good friends with my dad. My father and Burr Head worked cutting paper wood together when they were young.

Anybody else a bit sorry that the legend of @SGH was unmasked? In my mind, he had become some kind of cross between Paul Bunyan, Joey Chestnut, and Keyser Soze. Now, the pictures show that he is . . . just a regular human being. A five-steak eating, 200-pound brisket cooking human being, but a human being nonetheless.

@tulocay Let me try to explain the pan my friend. But first let me say that I do not use panning for brisket. Never have never will. So why now? Brother Apple really enjoyed my stuffed chickens. I'm making some to ship to him. One of the ingriedants that give my stuffing that good ole down home southern taste is brisket juice. Hence the pan. The brisket will be fed to ole Tom once rendered down and I recover the liquid. Don't lose faith in me brother. I still believe that pans are for serving food, not cooking food.

That name doesn't ring a bell, but according to Wikipedia, he grew up in Monck's Corner, SC. I had some of the best fried catfish in my life at a spot in Mocnk's Corner overlooking a beautiful river/canal. They served whole fried catfish and must've eaten 15 of them - no where near the kind of damage you could do, @SGH. The knife at the top is a twin of the knife that I left for you. The bottom knife is the massive breaking knife you see in all the pics from brisket camp. The big breaker on bottom has a true 14" blade. I used it for a size comparison to give you a idea of just how big the carcass knife at the top really is. The carcass blade measures a astonishing 19 and 3/4 inches. That's not including the handle. It is truly a spectacle to behold. I hope that you enjoy it.

The carcass knives have not been manufactured since the early 1980's. They were pulled off line and replaced with the big automated hydraulic knives. This is a shame as the home butcher can not afford a 375,000 dollar hydraulic knife.
The big breakers are incredible knives to say the least. But they pail in comparison to massive Hobart carcass knives. It's kind of like comparing my mini to Unit 1. No contest at all.Location- Just "this side" of Biloxi, Ms.
