    Same to you if you find any. Money is no object. I search the web and talk to folks at the slaughter house pretty regular looking for them. They are very hard to come by now.

    I have a non serrated brisket knife and it's very sharp. But, to slice a brisky that has good bark at pencil width slices it seems like it wants to rip vs clean cut. Would a serrated brisket knife be better or do I just need practice. Note: if the cut doesn't have a bark this particular knife will cut paper thin slices.

    @SGH, the 14inch blade on page 1, is that the Victorinox you were talking about on the NOLA thread?

     

    I've seen that on amazon for around $60.  Is that a good price?

    As to the knives everyone. Mine are Victorinox Breaking Knives. The blades are MUCH thicker than slicers, boning, general purpose or production knives. Again what you want is: Victorinox breaking knives 14" Cimiter curved breaking knife. 12" Cimiter curved breaking knife. The cheapest place to buy them is: Katom.com

    The one massive odd knife you won't be able to find. That is a special built carcass knife built by Hobart back in the 80's. They are no longer in production. That one is a gift for cazzy as soon as he acknowledges that I am the man ;)
