I got to ask brother. What style knives were they? Boning, general cutlery, chef? The reason that I ask is I'm not a fan of all things Victorinox. Only the massive breaking knives. The handles are far from small. Shouldn't be a issue as the breakers are overly large.Location- Just "this side" of Biloxi, Ms.

Me too. You know I'll cook. Those knives were awesome. On order- 14" and 12". I've only done primal butchering but never carcass. I'm all in on that deal. we will set up unit 6 for a 225 low and slow the night before and show them how it's done. Brother Tex let me highly recommend one more if I may sir. Get the Victorinox 8" Breaking Knife. It will quickly become the most used knife that you own. I only brought the two giants to get people's attention and it worked. The 8" Breaking Knife is their flagship breaker. It is perfect for all subprimal and rough cut work. It's truly a must have my friend. I hope you trust me on this one.

I haven't seen or handled Victorinox "breaking" knives, so they may be okay for me. But, again, I prolly won't be breaking down any cows.

Brother Tex don't let the 8" designation deceive you. The knife if quite formidable to say the least. Here is the 8" breaking knife upside a 9" custom made sheep knife. Notice how much larger the breaking knife is in girth length and overall mass. Breaking knives will always be far larger than other knives of the same length.

Brother Tex here is another very useful knife to have around. It's not a must but a excellent and handy knife nonetheless. This particular knife is only sold around the holidays. Why? I don't know brother Tex. Just how they do it. This is a true meat slicer, not a flimsy bread knife. What makes this knife unique is that it's a true meat slicer, again not a bread knife and has a 16" blade instead of the traditional 12 or 14 inch blade that all other meat slicers have. Is this a advantage? You bet your boots it is my friend.

I have some great Japanese steel, but it's chef level, not breaker level. I would certainly help finance whatever side of beef you and @nolaegghead wanted to invest in for a demo. I would be totally in for that!!

Thanks for the offer. I've never considered a cimeter and really was just planning on a slicer at some point. Handling your 8 incher at Nola's really opened my eyes to alternative possibilities. A new lifestyle, if you will.

Here is the very short and reduced version to the question at hand. A bull nose butcher knife works better when pushing vs pulling. The big breakers work better when pulling vs pushing. A bull nose butcher knife is very front heavy in hand. A big breaker is balanced and the weight distributed evenly. Due to the Cimeter shape of the breakers, it's much easier to seperate bone joints. A big breaker is a better choice for most people simply for most people prefer to cut pulling the knife towards them as opposed to pushing the knife away. The breakers are truly well rounded and multi functional. The bull noses are not.Location- Just "this side" of Biloxi, Ms.
