    This is open to some debate but usually if you have 2 equally trained meat cutters, one using a breaker and one using a bull nose. The one using the breaking knife will turn out more production and more "even and uniform" cuts of meat.

    Thanks. I actually do more push cutting since I use Japanese steel(it's shaped for that)

    I know that the blades were bigger, I was just trying to continue the joke ;)

    @SGH What is best for breaking down wings?  Those puny little joints don't take alot but I thought a 14" cimeter would work???  What do you think????

    There is one time that I do prefer the bull nose over the breaker. We slaughter live goats. I can cut a full grown love goats head clean off with one pass due to the forward weight of the bull nose knife. The goat never even knows what happens. I can cut his head off and have it in my left hand in less than 1 second. This is the only time that I prefer the bull nose. It is a excellent beheading knife when slaughtering live animals.

    No brother trim. The breaker is far to large for this task. Overkill times 10. The best poultry knife on the market is a 3 1/2 inch Victorinox poultry knife. It's what I use for deboning and making my stuffed chickens. The massive breaking knife is way overkill my friend. I know 3 1/2 sounds small but consider the target. It's honestly the best poultry knife out they right now.

    @thetrim‌ If you want one knife to do all poultry work and the best sheep knife that you could possibly ask for then I recommend and use: Victorinox Boning Knife. 5" Semi Flexible straight blade. You do not want a curved boning knife. You also don't want the "stiff" or "flexible" blade. You want the semi flexible knife. It will almost process poultry for you. And what it does to sheep and goat is unbelievable. It stands alone and unchallenged in this arena. As a sheep knife it has no equal or peer my friend.

    Poultry shears, IMO.  A knife is not the best tool in this case.

    You are correct. It's a emulsion consisting of water, sea salt, black & cayenne pepper and some almost liquefied white onions. This one was cooked more for collecting juice for my stuffed chickens than anything else. The flat was quite good though I thought.

    Actually I'm not totally surprised. You seem to be a very accomplished brisket cook yourself. I've never discredited you in that regard. I feel that DMW, Nola, Brother Tex, lousubcap, hapster, Brother Husker and a few others would catch it as well. Still I give credit where credit is due. Good catch Caz.
