    Yep.  I don't get jealous very often, but going to HI is hard to beat.  I've been there many times but it has been over 3 years so we're thinking that we are overdue...

    Wish I remembered the name of a small take out stand we visited. The food was good and cheap, and the ambience was great. Was just reminiscing about that trip yesterday, as a friend sent me a music video where the band was playing in the area around Kualoa Ranch and I recognized it immediately. 

    One of the most amazing sights I saw there was a huge guy hacking at cococunts with a machete out of the back of a pickup. He held the coconuts in one hand suspended in the air, and struck them with machete with incredible force. Not sure how he still had all fingers.

    This is our first trip to Hawaii - spending 6 nights at the Hale Koa doing tourist stuff and renewing my scuba cert. Then 3 days on Kona where I’m doing the Manta Ray night dive and then a couple days doing volcano stuff. Finally 3 days on Kaua’i at a beach resort doing absolutely nothing. 

    We are already planning a trip for next year with two other couples. 
    MMBGE / Large BGE / XL BGE (Craigslist Find) / SF30x80 cabinet trailer - "Ol' Mortimer" / Outdoor kitchen in progress.

    If it's not too late, on Kauai, get a reservation at The Beach House restaurant for dinner one night - especially if you are staying anywhere close to it.

    And if you are ever going to do a helicopter tour of anywhere, Kauai is the place to do it.  It allows you to see that on an island that is 32 miles in diameter you have the wettest place on earth (over 700 inches of rain/year), a desert-like beach area (Barking Sands Beach gets 8" of rain per year and is about 10 miles from the wettest place on earth), a canyon with over 3000 foot walls (Waimea Canyon, nicknamed "The Grand Canyon of the Pacific" by Mark Twain), waterfalls that drop over 800 feet, etc.

    It's our favorite island for all of these reasons - and it's not nearly as crowded as Maui or Oahu.

    We have reservations at The Beach House at sunset, Oasis, and RumFire. There is no way my wife would go up in a helicopter, otherwise that would already be booked. I'm already abandoning her a couple days for the dives so I'd feel guilty doing it by myself.

    I shut down the large after my last cook on it (Boston Butt a while ago) and have been cooking on the MiniMax since then. Opened the large earlier this morning and saw black, dried grease on all the ceramic surfaces. No rain in the forecast and external temp here is 75 degrees F so I started a clean burn.

    May need to replace the Smokeware after this is done.
    Smoke from the egg looks like this now:Going to let the lump burn up and clean the egg, replace the gasket if it needs to be done.

    Nice. Has to be done. There are few smells from the Egg as off-putting as a clean burn, IMO. I got a whiff just looking at that picture. 

    Sounds like a good excuse to throw a Rutland on that Egg. Will never have to replace again. 

    Jealous of your ambient temps, which are a full 60F or so above mine at present (and that doesn’t account for our wind chill, if you believe in such things). ❄️ Another deluge here.

    I found a used 12" Globe meat slicer for my buddy for $150. I was able to snag it 3 minutes after it was posted. It's a well used meat slicer that came out of a cafe but for the price it should clean up and run like new. (He returned a Chinese big box store slicer last Christmas and said no thanks.) This should handle whatever he throws at it. 



    I'll have to throw up some pictures after I'm done cleaning/lubricating everything.

    Grilled some chicken and then we decided to get out of the house for Mexican. Lunch prep done for the next few days. Too pretty of a day for the egg to stay lonely.

    Also love that you derived enjoyment from a cook with no specific purpose. Proof, in my mind, that just the process of Egging is immensely therapeutic.

    I'm not a welder, but I know the basics in the physical part of it enough to get by. I work in the machining and fabrication industry so I am around this stuff daily and have access to lots of equipment and other perks to be able to mess around making my own stuff

    Really cool. Love your table and respect the craftsmanship.

    Thanks. I'll take a final pic once in place and all the protective film is off. It will be the shiniest it will ever be, before it gets bombarded with grease and bbq sauce.
