    Busy last couple of days.



    Turkey 4 ways... 
    1, carcass, neck and wings for broth
    2, fell off the bone meat from #1 for sandwich
    3, pan fried liver, heart, gizzard with onion and chili
    4, smoked breast and leg quarters low n slow

    Pan fried in homemade ghee


    Early basil from seedling pruning


    Rogan Josh (lamb curry)


    Dug out some smoked Caribbean pumpkin puree from the freezer

    Chicken soup (no pic)

    Eight pizza (no pic)
    A tour de force, right there. Nice work.

    One ribeye covered in dizzy pig ghost and the other salt/pepper for leftovers / salads this week. Chicken and feta patty from Publix en route to a brioche bun for the wife.  It was great. Ghost steak was also great and sneaky “grab a Kleenex like you had a little wasabi” hot. Grilling soundtrack was Robert Earl Keen radio and dinner table soundtrack was “songs from frozen” for the little’un.  Beer can was for steaming the cast iron chimney cap. 

    Kidding about the beer can as usual.

    @Mattman3969 - did you intentionally hold the phone camera off the diamond plate alignment just to mess with us?  Regardless, the square plate delivered!  Great cook.  
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    @caliking haha, swmbo did most of it, matter of fact she made meatless biryani today, more than decent for first attempt! As for knuckle cracking, in my younger days I was able to crack almost every joint, now not so much  :)

    Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
