21 pounds of pork. The time line is difficult. Graduation is at 830 and I'm hoping for lunch -
@Elijah Nice, lucky graduates. Timeline is challenging indeed but I'm sure you'll somewhat manage. Great idea to protect the edges with foil.canuckland

Loaded potatoes. Potatoes on the pellet popper, chicken breasts & sirloin on the small egg.

@GrateEggspectations Pies look mighty fine, you've mastered the Geek Chef pizza oven, curious about the finger pointing in the last pic? The pie in the bottom right of the same pic reminds me of our potato pizza with homemade pesto sauce.canuckland

In FL (Anna Maria Island) for a few days. Tonight was paella on a 22" pan (never have wrestled with one that sized before). Pan a bit more diameter than the gasser and the gasser was weak at best. Got it close enough. All thought it was great. No real socarrat as this cook was a good 70 minutes over predicted time.
Pro -tip do not go with 8-10 count shrimp. Too large given the rest of the seafood.
But all was quite tasty.
And the no real soccarat $$ shot:
Thanks for lookin'.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -
One of Caps guests caught an action pic of him observing a couple mid-cook challenges…

I'd definitely hit that paella. And @Buckwoody Egger, if you're stuck eating hot dogs, that seems to be the right view for cooking and eating. Where are you?

Haven't tried paella after couple of miserable attempts years ago. How about a tutorial cap?

First attempt at Seafood Paella. Tasted very good but many lessons learned. My attempt at artistic veggie placement went out the window when I burned myself on the handle. Winter time cook next go round.

That's looks like a great first attempt. Well executed @BigreenGreg.

Drop this cook into the rotation. Year-round enjoyment.
Took me a while to finally figure out-paella is like pizza-get the rice right (like the dough) and then have at it. @Foghorn and company cranked out a Texas style one a few weeks ago, linked here.FWIW-

@Buckwoody Egger that's a nice area. Went there a few times in my youth with my parents and with my travel baseball team during the summers. Biggest mosquitos I've ever seen. But some good seafood. Enjoy.

Thanks Fog. I highly recommend it with an asterisk — basically a little info about what it is and what it thankfully (to me) isn’t.

Found the end of a tenderloin in the freezer. Put a little coffee rub and a little smoke on it, air fried potatoes, some freezer peas and a nice blue cheese sauce and call it dinner.
Love you bro! -
