Figured I would do my best to support @nolaegghead communist experiment ....
Chefing these today. Ribs trimmed St. Louis style, seasoned with Oak Ridge Dominator Sweet Rib rub, on both sides, and added salt and pepper on the bottom side. Spritzing with apple cider vinegar and worchestershire. No wrap, naked all they way. Like a beautiful orgy.

Half of a Costco 2 pack and special thanks to wicked good for the specimen charcoal.
Started the asparagus a little early so the top shelf was available once the thicker part was 115 and the thin part was pushing 125. Pulled when thick part hit 128 or so. Nice range of med rare to med. the couscous salad was also greatiPhone photo madness -
Nolas scalloped potatos, collards and country style pork ribs. Did Lane's BBQ Kapalua rub and basted with Bone Suckin Sauce. I've had a difficult time dialing in the ribs as they tend to dry out. I think I just get too impatient and pull tem too early. They were the weak link in tonight's meal. Potatos and collards were on point.

Cooked a turbo butt with some pecan wood. Then we made some bbq Mac n cheese with onion rings and some bbq ranch.
I forgot to pick up some apple juice so I poured in half of an angry orchard cider when wrapping.LBGE

I mentioned Friday (3/12) during the Zoom that I had a brisket planned for the great confluence occurring on 3/14. No clock on this cook but it was friggin tasty;
Heavy cayenne brings a sweet colour.
And the proverbial $$ shot: (Costco prime and it was good-ran around 270*F for around 10 hrs then 3 hrs FTC-11.5 lbs post trim).
Just one tine of the fork! (BTW- best BGE smoke ring I have scored in many a cook.)

Sesame kimchi broccoli, version 1.0. Served as a side, kind of salad but it was luke warm when we served it. Cold would be good too, maybe better. Chopped al dente steamed broccoli, chopped kimchi, mayo, sesame seeds and drizzle of sesame oil. It could’ve used some chopped peanuts or almonds maybe. Something with a little crunch. Will definitely make again and tweak it. It was probably 3:1 broccoli to kimchi.Love you bro!

Regular mayo which around here means Kraft olive oil mayo. Never had the itch to try kewpie, dukes, etc. this didn’t really have mayo to flavor it, more a sticky vehicle for the kimchi.Love you bro!
