    “Amazon” called to let me know about some fraud they caught on my account, or maybe not on my account.  It was my phone that got hacked. Wait, no, it was my checking account.  Just fill out this form and we’ll get you the money back. We can send it to you, but this is faster www.amazonblahblahblah.weebly.com. Sure, I’ll type that into my computer and enter all the personal info you want.  He wanted to keep arguing with me that he is actually Amazon when I laughed and told him to feck-off.

    People put water pans in to keep the humidity level high, soaking chips just adds some moisture and gives them a time-delay for smoking.  It's legit, but I don't think needed in a kamado.

    Yes he did. Im reading his book right now. Its a good read. 

    I was just reading Momofuku cookbook for a fun project idea this weekend and he has his method for cold smoking in there. They use an $89 electric Big Chief smoker in the restaurant but he recommended soaked chips in a kettle with a foil pan with a few chunks of lump .

    He’s super interesting, pretty solid follow on Instagram too.  He has a podcast that is hit or miss but some good stuff.  I saw him posting up a smoke prime rib at majordomo this week and I didn’t know what they were using for a smoker so the Big Chief smoker is really interesting to me.

    That's funny.  I just did the same with ours.  You should have seen what it looked like when I started.  You couldn't even move the ladder.  Now it's much better:


    I remember you pulling this photo out when I was proud of my pantry organization a while back.  I think I spit coffee as I scrolled down and the pic came into view.

    I’ve got to do that with the freezers here and make notes of what we need more of.  Hopefully it happens this weekend.
