@kl8ton - here's a good baseline for the bacon wrapped shrimp although I do a few mods addressed below:
https://howtobbqright.com/2017/08/10/bacon-wrapped-grilled-shrimp/
I go with 13-15 CT shrimp.
6 oz crab meat
4 oz cream cheese
3 cloves garlic
1/2 diced grilled hot hatch chili pepper
Sriracha as desired
Here's the step that brings 'em home:
When ready to wrap with the bacon, i layer the shrimp side of the bacon with horseradish sauce.
I don't use his dipping sauce put will baste with a flavored sauce like Pickapeppa spicy mango or Tiger sauce.
Hope this helps-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -
